INGREDIENTS

  • 12 eggs
  • 180ml cream
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 large red capsicum
  • 50g baby spinach
  • 100g grated Colby cheese
  • chopped chives, to garnish

METHOD

  1. Preheat oven to 160ºC bake. Cook Angel Bay Breakfast Beef Bites according to instructions on packet.
  2. Whisk eggs, cream, salt and pepper together until well combined. Finely dice capsicum and chop spinach. Cut each beef bite into 6 pieces.
  3. Divide beef bites, capsicum, spinach and three quarters of the cheese evenly between ten 200-220ml oven-safe jars. Pour in egg mixture and stir. Top with remaining cheese.
  4. Bake for 20-25 minutes, until puffed and set.
  5. Sprinkle with chopped chives to serve. Best served warm.
