INGREDIENTS

  • 750g potatoes, skin on
  • 1 1/2 Tbsp olive oil
  • 600g baked beans
  • 6 eggs
  • 120g grated Colby cheese
  • sliced spring onions and chopped parsley, to garnish

METHOD

  1. Preheat oven to 200ºC fan bake.
  2. Dice potatoes into 2cm cubes. Place in a saucepan, cover with water and bring to the boil. Boil for 12 minutes.
  3. Cook beef bites according to packet instructions.
  4. Place six individual oven-safe dishes or cast iron frying pans (10-12cm diameter) in the oven to preheat.
  5. Drain potatoes well. Heat oil in a large frying pan over medium-high. Fry potatoes until browned and crisp. Season with salt and pepper.
  6. Divide baked beans, potatoes and beef bites between the warmed dishes/pans. Make an indent in the middle and crack an egg into each dish. Sprinkle with a little salt and pepper, then the cheese. Bake for 10 minutes, until mixture is bubbling and egg white has set.
  7. Sprinkle with spring onions and parsley to serve.
