INGREDIENTS
- 10 eggs
- 200g cottage cheese
- 1/2 tsp salt
- 1/4 tsp pepper
- 125g grated Colby or Swiss cheese
- 24 brioche slider buns
- 200g tomato relish
- 100g hollandaise sauce or aioli
- 60g rocket leaves

METHOD
- Preheat oven to 160ºC bake. Grease a 20cm x 30cm roasting dish and line with baking paper.
- Blend eggs, cottage cheese, salt and pepper together until smooth. Pour into prepared dish and sprinkle with cheese. Bake for 20-25 minutes, until puffed and set.
- Cook beef bites according to packet instructions.
- Slice sliders in half and toast both sides on a hot plate or in a frying pan. Spread the bottom halves with relish and the top halves with hollandaise or aioli.
- Cut egg bake into 24 squares. Fill each slider with egg, beef bite and rocket. Secure with skewers, if desired.
