Lamb Harissa Burger

- 200g haloumi cheese
- 4 tsps harissa paste
- 4 tbsp mayonnaise
- 4 handfuls baby spinach
- 4 burger buns halved and toasted

METHOD
- Preheat your oven to 200°C and cook the patties according to the instructions on the pack.
- While the patties are cooking, slice the haloumi into 4 equal pieces. Heat a splash of olive oil in a non-stick pan on a medium heat. Add the haloumi and cook for 1-2 minutes on each side until golden and crispy. Remove, cover and keep warm.
- When the patties are cooked, brush each one with a teaspoon of harissa paste.
- To build each burger, spread a tablespoon of mayonnaise on the base of each bun, top with a good handful of spinach, then the patty, a lovely slice of crispy haloumi, and top with the bun.
