Middle Eastern Lamb Burger
INGREDIENTS
- 125g tzatziki
- 100g feta crumbled
- 4 burger buns (we like grainy buns from the bakery dept)
- 1/3 cucumber finely sliced
- ½ red onion finely sliced
- 1 tbsp fresh dill (can use 1 tsp dried dill)
- ½ handful fresh mint roughly chopped
- 2 handfuls baby spinach leaves

METHOD
- Cook the patties according to the instructions on the pack.
- Combine the tzatziki and feta together in a small bowl and mash with a fork to combine.
- When the patties are just about ready, halve the buns and lightly toast.
- Spread the base of each bun with tzatziki and then a patty, cucumber slices, a little red onion, a sprinkle of dill and mint and then spinach.
- Spread the inside of the bun lid with the remaining tzatziki and pop on top of the burger. Serve.
Chef's Tips: If you want to make your own tzatziki, combine 1 C natural yoghurt unsweetened yoghurt in a small bowl with 1 clove of crushed garlic, a little extra virgin olive oil, 1 tsp red wine vinegar, chopped fresh dill and grated cucumber. Season with salt to taste. If making homemade then there is no need to add extra dill.
