Chipotle Halloumi Veggie Burger

INGREDIENTS

  • brioche buns
  • 1 C red cabbage, shredded
  • small bunch of coriander
  • 4 radishes, shredded
  • 2 limes
  • 1 tbsp olive oil
  • pinch of chilli flakes
  • 1 carrot shredded
  • 1 tbsp chipotle plus a little extra for the top bun
  • 1 block of halloumi cut in 1cm thick slices
  • lettuce

METHOD

  1. Combine cabbage, carrots, radishes, coriander, limes, olive oil, chilli flacks and chipotle to make slaw.
  2. Cook the patties according to the instructions on the pack.
  3. Fry Halloumi in a pan for 30 seconds each side.
  4. Assemble your burger.
