- 2 handfuls mesclun salad mix
- 1 cucumber sliced
- ¼ C sliced gherkin
- 4 burger buns
- ½ C vegan mayonnaise
- ½ avocado
- ½ handful fresh coriander
- 1 lime juiced
- Chimichurri
- 1 handful flat leaf parsley
- 1 tbsp fresh oregano
- red chilli
- 3 cloves of garlic
- 1 tsp smoked paprika
- ¼ C gherkins
- 2 tbsp red wine vinegar
- 1 tbsp olive oil

METHOD
- Combine all the Chimichurri ingredients.
- Combine the mayonnaise, avocado, coriander and lime juice in a small blender and blitz until smooth.
- Cook the patties according to the instructions on pack.
- Assemble your burger.
