Mushroom and Avocado Veggie Burger

- 1 avocado smashed
- 1 red onion sliced
- sliced gherkin
- 1 lettuce
- ¼ C mayonnaise
- 4 burger buns
Mushrooms
- 150 g portobello mushrooms
- 1 onion diced
- 2 tbsp olive oil
- 1 tbsp tomato puree
- 1 tsp garlic powder
- ½ tsp cayenne pepper
- 1 tsp smoked paprika
- 2 tbsp maple syrup
- 2 tbsp balsamic vinegar

METHOD
- Cook the patties according to the instructions on the pack.
- Thinly slice the mushrooms and put into a baking dish. Combine all the mushroom ingredients and cover the mushrooms in the sauce.
- Bake in oven for 45 mins at 180°C. Turn a few times while cooking. Allow to rest for a few mins.
- Assemble the burgers.
