Smoked Brisket and Patty Cheeseburger

- 4 potato buns
- 4 smoked cheese slices
- 4 Tbsp smoked BBQ sauce
- 4 Tbsp American yellow mustard
- 1/2 red onion sliced
- 2 pickles sliced
- Brisket
- Beef brisket trimmed
- BBQ seasoning mix (see notes)
- Smoke chips

METHOD
- Begin by smoking your brisket on a low temp around 105°C for approximately 3 hrs.
- Remove from the smoker and wrap in foil, continue cooking at the same temperature for another 2 hrs.
- Remove brisket from the foil and continue cooking for 1 hr, with a little rest the brisket is now ready to carve and serve.
- To prepare the rest of your burger, grill your Angel Bay patty to your preferred method ensuring the patty reaches an internal temperature of 75°C. Top with a cheese slice to allow a little softening.
- Build your burger by toasting and buttering a potato bun, spread mustard on the base, top with the patty, sliced brisket, smoked cheese slice, BBQ sauce, onion, and pickle. Finally, top with the bun lid and a bamboo skewer if it gets a little tall.
- Note: There are so many BBQ seasonings available but generally you want a good blend of pepper (white and black), salt, brown sugar, garlic, onion powder plus some sweet paprika.
