Beef Burgers with Mango and Cucumber Ribbons

Beef Burgers with Mango and Cucumber Ribbons

INGREDIENTS

  • 4 whole wheat burger buns halved
  • ½ cucumber peeled into ribbons
  • 1 mango peeled into ribbons
  • ½ C of Labneh (strained yoghurt or lite cream cheese)
  • salad leaves
  • 1 tbsp lime juice
  • fresh mint finely chopped
  • fresh chill, finely chopped (optional)

METHOD

  1. Cook the patties according to the instructions on the packet.
  2. Split and lightly toast the whole wheat burger buns under your grill.
  3. Toss together the cucumber and mango ribbons with lime juice, some freshly chopped mint (and chilli if using).
  4. Spread a thick layer of Labneh onto each bun and layer the salad leaves, lite burger patties and top with the mango and cucumber ribbons.
  5. Serve immediately and enjoy!
