- ½ sourdough bread sliced
- 1 C baby spinach leaves
- 2 avocados smashed
- 80g feta crumbled
- 12 cherry tomatoes blackened skins

METHOD
- Cook the patties according to the instructions on the pack.
- Cut and scoop avocados into a bowl then smash with a spoon.
- Crumble feta.
- In a hot pan throw in cherry tomatoes and blacken the skins.
- Start with a slice of sourdough then apply a generous amount of smashed avocado followed with spinach, patty, crumbled feta, 3 tomatoes, and salt & pepper.
- Finish with a drizzle of olive oil.
- Enjoy.
