INGREDIENTS

  • 4 pita bread
  • 1 cucumber
  • ¾ C plain Greek yoghurt
  • 2 cloves of garlic pressed or minced
  • handful of mint
  • pinch of salt and pepper
  • 2 Cs of rocket
  • 1 red onion sliced
  • 12 cherry tomatoes sliced
  • ½ C cooked rice
  • fresh coriander
  • 2 lemons

METHOD

  1. Prepare the tzatziki by grating ½ of the cucumber and placing in a paper towel to drain liquid.
  2. In a bowl add the drained, grated cucumber, yoghurt, garlic, chopped mint, salt, and pepper and mix well.
  3. Cover and refrigerate until ready to serve.
  4. Cook the patties according to the instructions on the pack.
  5. Warm pita breads and cut around the edge in a semi-circle so they open like a pocket.
  6. Dice remaining cucumber into small cubes.
  7. Place rocket, patty, red onion, cherry tomatoes, cucumber, rice, and coriander in the pita.
  8. Top with tzatziki and serve with a lemon on the side.
