
Lamb Roti Burgers with Tandoor Spices & Raita

INGREDIENTS
- 1 red onion thinly sliced
- 1 tomato finely chopped
- 1 tsp ground coriander
- 1 tbsp white vinegar
- 1 tbsp vegetable oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp ground turmeric
- ½ tsp ground cinnamon
- ½ lemon juiced
- ½ handful fresh coriander chopped
- 4 rotis
- ½ iceberg lettuce shredded

METHOD
- To make the raita, in a small bowl combine the yoghurt, mint, garlic, and lemon juice. Season with salt and pepper and stir to combine. Set aside.
- In another bowl, mix the red onion, tomato, coriander and vinegar. Set aside to lightly pickle while you cook.
- In a small bowl, mix the cumin, coriander, paprika, turmeric, cinnamon, and lemon juice. Rub this spice mix onto the lamb patties.
- Heat the oil in a frying pan or grill pan over medium heat. Cook the patties for 4–5 minutes per side or until cooked through and lightly charred.
- Warm the roti or flatbreads in a dry pan. Spread a spoonful of raita on each, top with shredded lettuce, a lamb patty, a spoonful of onion salad and a drizzle more raita. Fold and serve warm.
