method
- Prepare the tzatziki by grating the cucumber and placing in a paper towel to drain liquid.
- In a bowl add the drained grated cucumber, yoghurt, garlic, chopped mint, salt, and pepper and mix well.
- Prepare hummus by topping with olive oil and Dukkah mix.
- Cover both and refrigerate until ready to serve.
- Cook Angel Bay Gourmet Beef Meatballs according to packet instructions.
- Combine celery, red onion, edamame beans, and coriander.
- Add meatballs to the salad mixture and top with olive oil, salt, and pepper.
- Warm pita bread according to packet instructions.
- Spread hummus mixture onto the pita bread, then top with the salad and meatballs.
