    INGREDIENTS
- 4 brioche buns
 - 1 red onion thinly sliced
 - 2 tbsp white wine vinegar
 - 200g fresh mozzarella thinly sliced
 - ½ C mayonnaise (good quality)
 - 1 tbsp American mustard
 - ½ buttercrunch lettuce leaves separated
 - 1 avocado thinly sliced
 - 6 gherkins thinly sliced

METHOD
- Preheat the grill to its highest setting.
 - Combine the onion and vinegar in a bowl and toss together. Leave for 10 minutes to lightly pickle. Drain before using.
 - Split the buns and lightly toast under the grill.
 - Cook the patties according to the packet instructions.
 - Place the cooked patties on a baking tray and top with the mozzarella. Place under the grill until the cheese is melting.
 - Spread the bun bases and tops with mayo and a swirl of mustard. Place the lettuce on the bases then the patties.
 - Layer up with avocado, onions and sliced gherkin.
 - Add the tops and eat up!
