  • 2 tbsp olive oil
  • 400g button mushrooms halved
  • 250g streaky bacon
  • 300g halloumi sliced
  • 1 avocado sliced
  • 150g cherry tomatoes halved
  • 4 tbsp aioli
  • 1 handful fresh parsley chopped

METHOD

  1. Cook the patties according to the instructions on the pack.
  2. Heat a film of oil on a BBQ hot plate (or in 2 frying pans) and cook mushrooms and bacon until the mushrooms are tender and the bacon cooked.
  3. Lastly add the halloumi to the hot plate and cook for a couple of minutes until golden on each side.
  4. Arrange a patty on individual plates. Top with halloumi, avocado, bacon, mushrooms and tomato. Season with salt and pepper and then drizzle with aioli and sprinkle with chopped parsley.
