Potato Latkes and Breakfast Sausage Burger

Latkes, Hashbrown, Rosti, whichever way you call it, make it, cook it, it’s a brilliant way to readily turn up your breakfast game. They bring loads of texture, crunch and moisture and compliment everything else on the plate as you will see when combined with some tangy chipotle and Angel Bay Breakfast Sausage.
INGREDIENTS
- brioche burger buns
- butter
- avocado sliced
- tomato sliced
Tangy Chipotle Sauce
- 1 heaped tsp chipotle sauce
- 4 tbsp sour cream
- 1 1/2 tbsp good-quality mayonnaise
- 1 lime juiced
Potato Latkes
- Potato coarsely grated
- onion finely diced
- egg beaten

METHOD
- Cook the patties according to the instructions on the pack.
- Place potatoes in a bowl of cold water for 1 minute, strain through colander. Spread over kitchen towel, roll up and twist to remove excess moisture.
- Transfer potato to a bowl and combine with onion and egg. Season.
- Heat a pan with oil and add a spoonful of potato mixture. Cook until golden brown and cooked through. Repeat with remaining mix and set aside.
- Split the buns, spread liberally with butter and lightly toast under the grill.
- Build with Latkes, patty, tangy chipotle sauce, avocado and tomato. Sandwich together with brioche bun lid.
