Meatball Breakfast Tacos
INGREDIENTS
- 1/2 tsp salt
- 1/4 tsp black pepper
- 12 tortillas preferably soft
- 1 avocado smashed
- 3 to 4 tbsp cheddar cheese
- 1/4 C chopped cilantro leaves optional
- sweet chilli sauce optional
- 1 red capsicum thinly sliced
- red onion optional
- lettuce diced (about 3 C)
- lime wedges optional

METHOD
- Cook the meatballs according to the instructions on the pack.
- Warm the tortillas one at a time in a clean, dry skillet over medium-high heat. Warm until the side starts to char a bit, about 20 to 30 seconds, then flip to the other side and repeat.
- Move the warm tortillas to a plate as they are ready. You can also warm all the tortillas at once in a microwave (30 seconds).
- Assemble the tacos, place the lettuce, guacamole, capsicum, red onion, meatballs, sweet chilli sauce, cheddar, and coriander.
