Loaded Wedges and Meatballs: Mexican Style

INGREDIENTS

  • 700g frozen potato wedges
  • 2 tsp taco seasoning
  • ½ tsp smoked paprika
  • 1 red onion diced
  • 125g tomato salsa
  • 1 C grated cheese
  • ½ C sour cream
  • ¼ C fresh coriander

METHOD

  1. Cook the frozen wedges in the oven according to the packet instructions.
  2. In a heated fry pan, cook the diced red onion for about 3 minutes or until soft, then add in taco seasoning and smoked paprika and cook for 1 minute.
  3. Add the meatballs and cook according to the instructions on the pack.
  4. When the wedges and the meatballs are cooked, layer the wedges on a serving platter and then spoon the meatballs over top.
  5. Sprinkle the cheese on top of the meatballs and put back in the oven on grill until the cheese has melted.
  6. Lastly, spoon a dollop of sour cream and tomato salsa on top of the wedges and meatballs.
  7. Sprinkle with the chopped coriander and fresh salt and pepper.
  8. Enjoy!
