Vegetarians look away, because this buger is for the emerging flexitarian market. Not hot on the latest lingo? A flexitarian is a person who has a primarily vegetarian diet but occasionally eats meat or fish. They're a patron who likes the best of both worlds and will get a kick out a streaky bacon and slaw stack atop our new veggie patty, topped with lashings of spicy Korean mayonnaise. Delish!

Korean Bacon Veggie Burger

INGREDIENTS

  • 125g streaky bacon
  • 4 brioche buns
  • 1 C rice vinegar
  • ½ C caster sugar
  • ½ tsp ground turmeric
  • 1 red onion sliced thinly
  • ½ C vegan mayonnaise
  • 1 tsp sesame oil
  • 1 tsp Gochujang paste
  • ¼ red cabbage sliced

METHOD

  1. Combine the mayonnaise, sesame oil and Korean spice paste. Then mix in the cabbage to create the slaw.
  2. Whisk the rice vinegar, caster sugar and turmeric together. Then add the onion and set aside for 15mins.
  3. Cook the patties according to the instructions on the pack.
  4. Fry the bacon until crispy.
  5. Assemble your burgers.
