Guacamole Frumpet and Breakfast Sausage Patty

INGREDIENTS
- 2 crumpets
- 2 eggs
- 80ml milk
- 1/2 tsp vanilla
- 1/2 tsp all spice
- salt
- vegetable oil
- 20g butter
Guacamole ingredients
- 1 avocado crushed
- 1 can chopped tomato
- 1/2 red chilli finely chopped
- 1 red onion finely chopped
- 1/2 bunch coriander chopped stems
- 1 lime juice
- salt pepper
- bunch of parsley
- handful of dill

METHOD
- Start making the guacamole by combining all ingredients, check seasoning. Wrap tightly to prevent browning before serving.
- Whisk French crumpet mixture in a bowl, combine eggs, milk, cream, vanilla and set aside.
- To make frumpet steep crumpet in mixture for 20 seconds ensuring it soaks up liquid. Heat butter and vegetable oil in a nonstick fry pan over a medium high heat and cook crumpet until caramelised on both sides.
- In another non stick fry pan grill the patties according to the instructions on the pack, once cooked set aside and keep warm.
- To serve place patty on frumpet, top with a scoop of guacamole and finish with fresh herbs.
Chef's Tip: Serve with a side of Canadian maple syrup to go the extra mile.
