Caramelised Onion and Beef Patty Loaded Fries

  • 1kg starchy potatoes (Agria, Sebago, Russe, Maris Piper, Red Rascal), peeled and cut into chips
  • 150g Tasty cheddar cheese
  • 3 Tbsp Barker's Caramelised Onion Relish
  • 1/2 handful Chives, finely chopped
  • 3 Tbsp Olive Oil

METHOD

  1. Preheat the oven to 220°C (fan). Toss the potatoes with a good drizzle of olive oil and a generous pinch of salt. Spread on a baking tray in a single layer and bake for 40-45 minutes, turning halfway, until golden and crisp.
  2. While the fries are baking, heat a film of oil in a large frying pan and cook the patties for 3-4 minutes on each side until well coloured. When cool enough to handle, crumble into small pieces.
  3. Once the fries are crisp, remove from the oven and scatter the crumbled beef patties over the top. Sprinkle with grated cheese and return to the oven for 5 minutes, or until the cheese is melted.
  4. Dot with Barkers caramelised onion relish and scatter with chopped chives. Serve hot, straight from the tray or on a large platter.
