  • 2 large capsicums
  • ½ cup grated cheese
  • ¼ cup fresh parsley, finely chopped
  • ¼ cup tomato passata
  • ¼ tsp minced garlic
  • ¼ tsp chilli flakes

METHOD

  1. Preheat the oven to 180°C.
  2. Have the capsicums lengthwise and remove the cores. Place cut side up in an ovenproof dish, drizzle with some olive oil, and bake for about 15 minutes.
  3. Make the filling: cook the burger patties according to the packet instructions and chop into small pieces.
  4. Combine in a bowl with the grated cheese, chopped parsley, tomato passata, and chilli flakes.
  5. Spoon the burger mixture into the partially cooked capsicum halves, drizzle with a little more olive oil, and bake for another 15 minutes or until the capsicums are tender.
  6. Serve with some crusty bread and a crisp green salad on the side.
