INGREDIENTS

  • 4 flatbreads
  • 200g grated Mozzarella cheese
  • 1 Barker's Caramelised Onion Relish
  • 1/2 red onion, thinly sliced
  • 1 handful Rocket
  • 2 Tbsp sour cream
  • 1/2 lemon, juiced
  • 1 Tbsp Olive Oil
  • 2 clove garlic, crushed
  • 1 Tbsp Mayonnaise

METHOD

  1. Heat the olive oil in a large frying pan over medium heat. Add the patties and cook for 4–5 minutes each side until browned and cooked through. Break into chunks with a spoon, add the garlic, and cook for a further 1 minute. Season with salt and pepper, then remove from the heat.
  2. Preheat the oven to 200°C (fan). Place the flatbreads on a lined baking tray. Spread each with a generous spoonful of Caramelised Onion Relish. Top evenly with the crumbled beef, grated mozzarella and sliced red onion.
  3. Bake for 10–12 minutes until the cheese is melted and golden. Meanwhile, mix the sour cream, mayonnaise and lemon juice in a small bowl. Season with salt and pepper.
  4. Remove flatbreads from the oven. Drizzle with the lemon cream sauce and scatter with rocket. Serve warm.
