INGREDIENTS

  • 2 store bought jalapeno poppers
  • 3 1/2 Tbsp lite cream cheese
  • 3 1/2 Tbsp chipotle mayonnaise
  • 2 brioche burger buns
  • 4 rashers streaky bacon
  • 2 slices cheddar cheese
  • 1/3 c sliced jalapenos
  • 1/2 avocado, sliced
  • 1/2 small red onion, sliced
  • 2 large leaves cos lettuce

METHOD

  1. Cook patties according to instructions on packet. Cook jalapeño poppers at the same time, if using.
  2. Place cream cheese and chipotle mayonnaise in a bowl and stir until well combined.
  3. Heat a large frying pan on medium-high. Halve burger buns and fry until golden brown. Remove from pan.
  4. Fry bacon (if using) until golden and crisp.
  5. Top burger patties with cheese and return to the oven for 1 minute to melt.
  6. Spread both halves of the burger buns with chipotle cream cheese mixture.
  7. Top the bottom half of each bun with jalapeños, cheese-topped burger patty, bacon, avocado, red onion and lettuce. Sandwich together with the top half of the bun.
  8. Secure a jalapeño popper on top of each burger using a wooden skewer, if desired.
