Guacamole Frumpet and Breakfast Sausage Patty

INGREDIENTS

  • 2 crumpets
  • 2 eggs
  • 80ml milk
  • 1/2 tsp vanilla
  • 1/2 tsp all spice
  • salt
  • vegetable oil
  • 20g butter

Guacamole ingredients

  • 1 avocado crushed
  • 1 can chopped tomato
  • 1/2 red chilli finely chopped
  • 1 red onion finely chopped
  • 1/2 bunch coriander chopped stems
  • 1 lime juice
  • salt pepper
  • bunch of parsley
  • handful of dill

METHOD

  1. Start making the guacamole by combining all ingredients, check seasoning. Wrap tightly to prevent browning before serving.
  2. Whisk French crumpet mixture in a bowl, combine eggs, milk, cream, vanilla and set aside.
  3. To make frumpet steep crumpet in mixture for 20 seconds ensuring it soaks up liquid. Heat butter and vegetable oil in a nonstick fry pan over a medium high heat and cook crumpet until caramelised on both sides.
  4. In another non stick fry pan grill the patties according to the instructions on the pack, once cooked set aside and keep warm.
  5. To serve place patty on frumpet, top with a scoop of guacamole and finish with fresh herbs.

Chef's Tip: Serve with a side of Canadian maple syrup to go the extra mile.
