Greek Lamb Patty Gyros Bowls

INGREDIENTS

  • 1½ C brown rice and quinoa (mix)
  • 150 g cherry tomatoes halved
  • 1 red onion thinly sliced
  • ¾ cucumber diced (less if large)
  • ½ C kalamata olives pitted and sliced
  • 2 tsp fresh oregano
  • 150 g feta crumbled
  • 1 handful fresh parsley chopped
  • Tzatziki
  • 1 C Greek yoghurt
  • 0.30 cucumber grated and drained
  • 2 cloves of garlic crushed
  • 1 tbsp fresh dill chopped (or use 1 tsp dried dill)
  • 1 tbsp lemon juice

METHOD

  1. Cook the lamb patties according to packet instructions.
  2. Cook the rice and quinoa according to packet instructions.
  3. To make the tzatziki, in a bowl, combine the yoghurt, cucumber, garlic, dill, lemon juice and season to taste with salt. Mix well.
  4. Toss cherry tomatoes, red onion, cucumber, olives, oregano and feta in a bowl.
  5. Divide the rice between individual bowls and then the salad.
  6. Top with the cooked lamb patties.
  7. Drizzle tzatziki sauce over the lamb patties and salad.
  8. Garnish with parsley and serve.
