
Thai Beef Noodle Salad

INGREDIENTS
- 300g thin rice noodles
- 1 cucumber sliced
- 1 shallot finely sliced
- 1 handful basil
- 1 handful mint
- 1 handful coriander
- peanuts
- Nam Jim dressing
- 4 tbsp lime juice
- 2 tbsp fish sauce
- 1 fresh chilli sliced thinly
- 1 tsp sugar
- 1 tsp grated ginger

METHOD
- For dressing combine all ingredients together and drizzle about 2 tablespoons over the patties.
- Cook the patties according to the instructions on the pack, marinating while they cook.
- Rehydrate the noodles in boiling water for 5 minutes. Combine with cucumber, shallots and toss through remaining dressing.
- Add the herbs, e.g. mint, coriander and basil and toss again.
- Arrange on a platter and top with patties and peanuts.
