Sausage & Egg Croissant
INGREDIENTS
- 1 tsp lite olive oil
- 1 large egg
- 1 Tbsp milk or cream
- 1 tsp butter
- 1 croissant
- 1 Tbsp hollandaise sauce or aioli
- 1/4 avocado, sliced
- 25g feta cheese
- 1 small handful microgreens

METHOD
- Heat oil in a small frying pan on medium. Cook Angel Bay Breakfast Beef Sausage Patty for 6 minutes, turning 1-2 times, until piping hot.
- Meanwhile, whisk egg and milk/cream together. Season with salt and pepper. Melt butter in a small frying pan on medium-low. Scramble eggs.
- Halve croissant and lightly toast. Spread with hollandaise / aioli.
- Fill croissant with egg, sausage patty, avocado, crumbled feta and microgreens.
