Kiwi Burger Smashed Tacos with Beetroot Relish

  • 8 tortillas
  • 1/4 Iceberg lettuce, shredded
  • 1/2 red onion, finely sliced
  • 4 Tbsp Barker's beetroot relish
  • 1 Tbsp vegetable oil
  • 4 eggs
  • 1/2 handful fresh parsley, chopped

METHOD

  1. Place a burger pattie on each tortilla, press down firmly.
  2. Heat a little oil in a large frying pan over medium-high heat. then place two tortillas, pattie side down and cook for a few mintues. Flip and top each patty with cheese. Cook just until the tortillas crisp. Repeat with remaining tortillas and patties.
  3. In a separate pan, add a little oil and fry the eggs to your liking. Season with salt and pepper.
  4. Place a smashed taco on each plate, top with an egg, lettuce, red onion, and a good dollop of relish.
  5. Sprinkle with parsley and serve warm.
