Italian Burger Sandwich
INGREDIENTS
- 2 capsicum
- 1 eggplant sliced
- 2 tbsp olive oil
- 1 ciabatta loaf
- ¼ C aioli
- 2 handfuls rocket
- 70 g prosciutto
- 1 C sundried tomatoes drained and sliced
- 200 g fresh mozzarella sliced
- 1 handful fresh basil

METHOD
- Heat the BBQ over medium-high and cook the patties until well coloured and piping hot.
- At the same time, grill the capsicum until the skin is charred. Let them cool slightly, then peel off the skin and slice them into strips.
- Brush the eggplant slices with olive oil and grill until tender.
- Slice the ciabatta into quarters and then halve each piece. Toast on the BBQ until golden.
- Spread the base of each with aioli and then a layer of rocket.
- Place a meat patty on top of the rocket and then a curl of prosciutto.
- Place grilled eggplant slices on top.
- Add sundried tomatoes and grilled capsicum strips.
- Finish with slices of fresh mozzarella and basil leaves.
- Drizzle with a little olive oil and season with salt and pepper.
- Place the top half of the ciabatta on top.
- Serve the sandwiches warm.
