
Greek Burger with Halloumi

INGREDIENTS
- 4 sesame seed bun
- 4 slices halloumi
- 1 cucumber cubed
- 250g baby tomatoes halved
- 1 red onion thinly sliced
- 1 cos lettuce
- 1 tbsp olive oil
- 4 tbsp tomato relish or chutney
- 1 lemon
- salt and pepper

METHOD
- To prepare the Greek salad filling, cube the cucumbers, thinly slice the red onion, halve the baby tomatoes and throw in a bowl together. In a separate bowl, combine the lemon juice, olive oil and salt and pepper to taste. Drizzle over the veggies.
- Cook the patties according to the instructions on the pack. While the burgers are cooking, halve the burger bun and lightly toast under the grill.
- Heat a tbsp of oil in a shallow fry pan and fry the halloumi until golden on both sides.
- To assemble the burger, slather the bottom bun in the tomato relish or chutney. Place the cos lettuce, halloumi and beef patty on the bun followed by a generous helping of the Greek salad. Place the top bun on the top and hold it all in place with a decorative skewer.
