Big Brekkie Muffin

- 1 hash brown
- 1 tsp lite olive oil
- 1 egg
- 1 English muffin
- 2 tsp soft butter
- 2 tsp tomato relish
- 1 slice cheddar / Colby cheese
- 1 handful baby spinach leaves
- 1 Tbsp aioli

METHOD
- Deep fry hash brown until golden and crisp.
- While hash brown cooks, heat oil in a frying pan on medium. Cook Angel Bay Breakfast Beef Sausage Patty for 6 minutes, turning 1-2 times, until piping hot. Fry egg.
- Halve muffin, toast and butter. Spread the bottom half with relish and top with cheese. Add spinach, hash brown, sausage patty and egg.
- Spread the top half of the muffin with aioli and sandwich together.
