  • 2 seeded brioche burger buns
  • 2 tsp lite olive oil
  • 2 eggs
  • 2 slices cheddar cheese
  • 4 Tbsp beetroot relish
  • 1 tomato, sliced
  • 4 leaves fancy lettuce
  • 2 Tbsp American mustard
  • 2 Tbsp mayonnaise

METHOD

  1. Cook patties according to instructions on packet.
  2. Heat a large frying pan on medium-high. Halve the buns and toast in the frying pan. Set aside.
  3. Add oil to pan and fry eggs until cooked to your liking.
  4. Top burger patties with cheese and return to the oven for 1 minute to melt.
  5. Top the bottom half of each bun with beetroot relish, lettuce, cheese-topped burger patty, tomato and egg.
  6. Spread the top halves of the buns with mustard and mayo and sandwich together.
