Japanese Inspired Umami Burger

INGREDIENTS
- 4 sesame burger buns
- handful of shredded cabbage
- 4 tsp Japanese mayonnaise
- A medley of grilled mushrooms (try shiitake and enoki for an authentic taste)
- 4 slices of Edam cheese
- fresh coriander or parsley to garnish
Basting mixture:
- 1 tsp Miso paste
- 1 tsp Mirin
- 1 tsp soy sauce
- 1 tsp brown sugar

METHOD
- Mix miso paste, mirin, soy sauce and brown sugar in a bowl.
- Generously baste the patties while cooking according to the instructions on the pack.
- Split and lightly toast the burger buns under the grill.
- Grill mushrooms until soft and a little crispy.
- Prepare salad by mixing the shredded cabbage with Japanese mayo.
- Place the shredded cabbage mixture on bun, layer with basted patty, followed by a slice of cheese and the mushroom medley. Top with coriander or parsley and place bun lid on top and serve.
