  • 35g butter
  • 250g streaky bacon
  • 4 Brioche Buns halved
  • 60g baby spinach leaves
  • ½ C hollandaise sauce
  • ½ handful fresh parsley chopped

METHOD

  1. Cook the patties according to packet instructions.
  2. At the same time whisk the eggs in a bowl and season with salt and freshly ground black pepper.
  3. Melt half of the butter in a pot over medium heat and add the remainder to the egg. Pour the egg into the pot and cook, stirring gently at times until the egg starts to set, continue to stir and remove from the heat while the egg is still moist or cook for longer if you prefer.
  4. While the egg is cooking, cook the bacon to your liking in a frying pan over a medium heat and toast the buns.
  5. Assemble bun bases on individual plates, cover with spinach and then a slice of bacon and a patty.
  6. Add a good dollop of egg on top of each pattie and a drizzle of hollandaise.
  7. Sprinkle with parsley, pop on the lid and serve.
