Italian Burger Sandwich

INGREDIENTS

  • 2 capsicum
  • 1 eggplant sliced
  • 2 tbsp olive oil
  • 1 ciabatta loaf
  • ¼ C aioli
  • 2 handfuls rocket
  • 70 g prosciutto
  • 1 C sundried tomatoes drained and sliced
  • 200 g fresh mozzarella sliced
  • 1 handful fresh basil

METHOD

  1. Heat the BBQ over medium-high and cook the patties until well coloured and piping hot.
  2. At the same time, grill the capsicum until the skin is charred. Let them cool slightly, then peel off the skin and slice them into strips.
  3. Brush the eggplant slices with olive oil and grill until tender.
  4. Slice the ciabatta into quarters and then halve each piece. Toast on the BBQ until golden.
  5. Spread the base of each with aioli and then a layer of rocket.
  6. Place a meat patty on top of the rocket and then a curl of prosciutto.
  7. Place grilled eggplant slices on top.
  8. Add sundried tomatoes and grilled capsicum strips.
  9. Finish with slices of fresh mozzarella and basil leaves.
  10. Drizzle with a little olive oil and season with salt and pepper.
  11. Place the top half of the ciabatta on top.
  12. Serve the sandwiches warm.
