INGREDIENTS
- 1 tbsp Kewpie mayonnaise
- 1 cucumber, thinly sliced
- 1 tbsp Greek yogurt
- 1 small handful Superb Herb Italian parsley, chopped
- 1 small handful Superb Herb Mint, chopped
- 1 clove garlic, minced
- 5 cherry tomatoes, cut into quarters
- A slice of Food Snob feta cheese, crumbled
- 1/4 red onion, diced
- 1/4 red capsicum, diced
- lemon juice
- salt
- pepper

METHOD
- Cook 4 Angel Bay Gourmet Meatballs in accordance with the instructions on the packet. Once cooked, chop the meatballs into smaller pieces.
- Thinly slice one cucumber into a container with a lid.
- Add the capsicum, yoghurt, feta, herbs, meatballs, cherry tomatoes, red onion, garlic, mayonnaise, lemon juice, salt and pepper. Place the lid and shake. Enjoy!
