Brat and Beef Melt

INGREDIENTS

  • 4 burger buns
  • 80g butte
  • 1 Bratwurst sausage
  • 100g Sauerkraut
  • 4 slices Swiss cheese
  • 40g seeded mustard
  • salt and pepper

Beer Cheese Sauce

  • 30g butter
  • 30g flour
  • 180ml milk
  • 160ml beer
  • 5ml Worcestershire Sauce
  • 10g Dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp salt
  • 300g tasty cheddar cheese, shredded

METHOD

  1. To prepare the beer cheese sauce, make a roux by melting butter in a saucepan over a medium heat. Whisk in flour until forms a paste, keep mixing for 2 minutes to cook out the flour.
  2. Slowly add milk stirring vigorously as you go, once the milk is added continue with the remaining ingredients whisking as you go. Once the sauce is finished set it aside to cool to a warm room temperature before using.
  3. Cut bratwurst into 4 pieces then grill along with the Angel Bay Angus Burger patty until it reaches an internal temperature of 75c. Season if needed.
  4. Toast burger bun and lather with butter. Then to build the burger, smear mustard over the bun base add Angel Bay Angus Patty, Swiss cheese slice, sauerkraut cheese sauce and bratwurst before finishing with bun lid.
