Lamb Rissoles with Pearl Barley Salad

  • Tzatziki
  • 1 C pearl barley
  • tomatoes chopped
  • cucumber thinly sliced
  • spring onion thinly sliced
  • celery thinly sliced
  • lemon
  • mint
  • olive oil
  • salt and pepper

METHOD

  1. To prepare the salad, cook the pearl barley according to the product instructions, being sure to cool completely before continuing. Thinly slice tomatoes, celery, sprint onion and a handful of mint. Combine all ingredients in a bowl.
  2. In a separate bowl, combine 2 tbsp of olive oil, a squeeze of lemon and salt and pepper to taste. Drizzle over salad ingredients while tossing lightly.
  3. Cook the rissoles according to the instructions on the pack.
  4. To serve, transfer rissoles to the plate. Place a cup of salad alongside the rissoles with a large dollop of tzatziki. Garnish with a fresh sprig of mint, half a cut lemon and a crack of pepper.
